Our favorite vibrant, veggie-filled gnocchi recipes
We do our best to eat as many vegetables as possible from our little city backyard garden and our local farmer’s markets. Enter our series: Eat The Rainbow! The prettier a meal looks, the better it tastes (it’s SCIENCE) so this year we’ve gone all in on making nontraditional gnocchi with colorful veggies. We’re highlighting our top 3 colorful & delicious gnocchi recipes to date using beets, purple sweet potatoes, and swiss chard! We may not be recipe developers (yet), but we sure can mash make a delicious home cooked meal drawing inspiration from our good friend Google (+ many a blog)!

The only tools you need are a potato masher, a slotted spoon/some kind of strainer, and a $5 gnocchi roller (technically you don’t even “need” a roller – pillow gnocchi are just as delicious!) to become self-proclaimed gnocchi experts like us.
1. Purple Sweet Potato Gnocchi
We followed this recipe from Wandering Chickpea to make our vibrant purple gnocchi. We’ve made it a couple times: once with a creamy ricotta sauce and one with a light herb butter sauce. This batch turned out looking like the little beetles Timon & Pumba eat in the Lion King so if you have any Lion King lovers in your household…put these on your list! This is the first batch we made using our gnocchi roller tool so while these are bigger making them more bug-like, they have the lovely little indentations from the roller!

2. Beetroot Gnocchi
We took pieces of two recipes for our beautiful pink beet gnocchi. We used the ingredients and instructions for the gnocchi itself from The Endless Meal’s recipe and the brown butter sauce and broccoli (we picked purple cauliflower to add even more color!) inspiration from Food and Mood’s recipe.

3. Swiss Chard Potato Gnocchi
This recipe from Audrey Le Goff’s “Pardon Your French” blog spoke to us 1) because we were looking for something fun to do with some fresh chard we got from Philly’s Rittenhouse Farmer’s Market and 2) because it originates from Nice, France where we traveled on our honeymoon! This was the closest we’ve ever made to a “regular” potato gnocchi, and it may have been the most delicious!
